Sweet Chilli Sauce Day

Hello!
We are definitely back in winter. So glad I took the opportunity to get outside when I did.
I have a small list of things to drag out of the freezer and cook.
Today it was to make a batch of sweet chilli sauce.
In fact, I decided on a double batch

Even though my chillies were already cut and deseeded, the prep time took me a couple of hours!
It takes an eon to peel all that garlic (about 200gms)

Or maybe I am just slow!
Finally got all the garlic peeled, ginger also peeled and whizzed up the lot so I could get it into the pot to start cooking.

It eventually became hard to spend any time in the kitchen! Even though it smells good, it is literally eye-watering! (I must admit my sinuses are super clear this evening!!! haha)

It probably took a couple of hours simmering. I will know tomorrow if I did it too long or not long enough!

I took some warm mash down to the girls, who were pretty pleased about it.

Squirt still not doing great… but she did eat a bit today and I let her wander about the shed while I cleaned out her cat box. She seemed keen on the bread scraps I gave her, but she tires out quickly.
She is sleeping in by the fire (no – not too close!!)

I noticed my ‘afterthought’ garlic is looking sturdy!

And three weeks ago I put some laterals on the kitchen window sill –

I think today they are looking quite good, although no sign of roots forming yet. Perhaps I should give them a drop of kelp juice! (Maybe after their day with the sweet chilli sauce fumes I might be greeted at breakfast with some ready to pick tomatoes…. who knows!)

Tomorrow I might do nothing…

    Know you’ll enjoy the fruits of your labor. Tomatoes should go to town mixed with the smell of that sauce GREAT work!!???

    1. lol – I think I over estimated how great my tomatoes were going to be this morning. They look suspiciously the same! Jam on toast for brekkie as usual!

  2. I grew chilli peppers this year to make your sweet chilli sauce recipe. On the recipe it is not converted to cups. I went to a conversion chart to try to figure it out. This is what I came up with.
    2 cups chillies
    1/2 cup garlic
    1/3 plus cup ginger
    5 cups cider vinegar
    10 cups sugar
    1 teaspoon salt
    this seems like a lot of sugar for the amount of other ingredients. Some of the conversion charts I found also said 8 cups sugar so I’m not sure. Thank you for your time. I always enjoy all your posts.

    1. Hi Ramona – thats always a bit of a worry with the different measuring standards. I’d hate to write it up wrong and waste someones time. (and ingredients) Two cups of chilli might not be enough? Is that chopped? 300gm is a LOT of chillies. And yes… there is a lot of sugar in that one.
      I think a weight conversion might be safer… you are looking at about 10&1/2 ounces of chillies. Depending on how you pack your cups it might be quite off the mark for the recipe. Garlic, 3.5 oz, Ginger 2.5oz, sugar 4.4lb (and yes its a lot!!) Cider vinegar Litres is tricky… in fluid ounces 1.2lt = 40.5 (Which is about right when you said 5 cups)
      Sorry I was a bit lazy on that post writing up the conversion for the US people! 😀 Hope you get to make that one up successfully… its such a lovely sauce!!! Let me know how you go!
